Tangy Cabbage Salad

1 cup purple cabbage (fine sliced)

1/2 cup green cabbage (fine sliced)

1/4 cup purple onion

1 tbsp amazing mayo

1 tbsp apple cider vinegar

2 tsp olive oil

2 tsp dijon mustard

1/2 tsp lemon zest

Fine slice one cup of purple cabbage, 1/2 cup of green cabbage and a 1/4 cup of red onion. Mix well.

In a small bowl whisk together 1 tbsp of amazing mayo, 1 tbsp of apple cider vinegar, 2 tsp of olive oil and 2 tsp of dijon mustard. Finally add 1/2 tsp of lemon zest and whisk ingredients together well. Pour dressing over the top of your cabbage and purple onion. Toss until vegetables are well coated. You may garnish with additional lemon zest and purple onion. Cover, refrigerate and let the dressing marinate your veggies. Toss again before serving. Purple cabbage potato buns are a great a complement to this salad.
