Red Oak Salad with Cucumber Dill Dressing


4 cups of red oak lettuce

1 cup of thin sliced cucumber

½ cup of thin sliced radishes

¼ cup of diced green onions

1 cup of thin sliced celery.


Wash and dry or spin red oak lettuce and tear into bite size pieces, and place in large bowl, add cucumber, radishes, green onions and celery.

Add desired amount of cucumber dill dressing and toss well.

Optional: add choice of grilled steak, salmon or chicken.

Cucumber Dill Dressing:

½ cup of peeled and diced cucumber

2 tbsp of fresh dill

1 garlic clove

1 tsp Dijon mustard



2-6 tsp of olive oil – or simply omit.

Put all ingredients in bullet or blender and puree until well mixed, adjust dill, and salt and pepper to taste.

Olive oil can be omitted if daily allowance is used or increased if in maintenance.
