1 plain pancake
1 pumpkin spice latte
1 tsp of cinnamon
1 tsp of soda
2 tsp granular sweetener
1 beaten egg
4 tsp oil
1/2 tsp vanilla extract
3/4 cup finely grated rutabaga
In a small bowl combine: 1 plain pancake, 1 pumpkin spice latte, 1 tsp of cinnamon, 1 tsp of soda, 2 tsp granular sweetener. Mix well.
In another small bowl combine 1 beaten egg, 4 tsp oil, 1/2 tsp vanilla extract, and 3/4 cup fine grated rutabaga. Mix well.
Mix wet into dry until smooth. Pour into parchment lined or nonstick baking dish. (I like my 6 inch baking dish) Bake at 350 for 35 min. Remove and cool. May garnish with sweetener of choice.
