Hulusky (Jicama) Dumplings


Ingredients:

Halusky:

1 package of potato puree or egg omelette

1 egg white

1 cup of fine grated jicama, excess water squeezed out

1 garlic glove minced or pressed

¼ tsp of salt

¼ tsp of pepper

½ tsp of paprika

Cabbage:

1 cup of sliced cabbage your choice

2 tsp grape seed oil (optional)

1 tsp of paprika

1 garlic clove minced or pressed

¼ tsp of salt

¼ tsp of pepper

Slightly beat egg white, once beaten add choice of packet, jicama, garlic, salt, pepper and paprika. Mix well.

Bring a medium pot of water to a boil, using a teaspoon scoop up dough in the tip of the teaspoon to drop into the boiling water, small is fine as the dough will expand. Work quickly, once all dough is in the water cook for 10 minutes, the dough will be floating, remove with slotted spoon to drain in colander.

In a pan place oil ( if using) and garlic, brown garlic over low heat, and add cabbage, salt, pepper, paprika, and halusky dumplings. Heat through until cabbage is tender and all ingredients are well mixed.

Serve immediately

Recipe yields 1 serving of unrestricted protein, 2 cups of select vegetable, and 2 tsp of oil if used.
