Red Enchilada Sauce
Choice of fillings: cooked chicken, jicama, chayote squash, peppers, tomatoes, green onions, cilantro- maintenance add cheese.
Spice chicken and beef and veggies with seasonings such as oregano, onion and garlic powders, coriander, cumin, paprika, cayenne pepper, cinnamon and cloves.
Preheat oven to 350 degrees.
Take your tortilla and spread enchilada sauce on each side, then fill your tortilla with choice of protein and vegetables.
Place in baking dish seam side down, repeat until desired number of enchiladas are in dish, garnish with cilantro, extra vegetables, maintenance add your favorite cheese.
Bake for 30 minutes.
