2 cups of zucchini
1 cup of grape or cherry tomatoes
1 cup mushrooms
Wash and dry all veggies, quarter of halve the zucchini and mushrooms, leave tomatoes whole.
Thread onto wooden skewers alternating between the veggies.
Place on hot barbecue grill, medium high heat, turning every 4 minutes – you will need 3 to 4 turns until done, grape tomatoes will be ready to burst when done.
Remove from heat and immediately brush with a serving of Oregano Garlic Lemon Dressing.
Oregano Garlic Lemon Dressing:
8 tsp of olive oil
4 tsp of water
2 cloves of garlic
4 tbsp fresh oregano
4 tsp of lemon juice
½ tsp salt
½ tsp pepper
Pinch of cayenne or hot sauce if desired.
Blend all ingredients together and place in fridge in sealed container for flavors to meld. 8 serving 1 tbsp per serving.
