Vanilla Chai Zucchini Cake



1 packet of Vanilla Chai Latte

1 packet of Pancake or Vanilla drink

½ tsp of baking powder

1-2tsp of Chai Latte Spice

2 tsp of granular sugar free sweetener - optional

Wet Ingredients:

1 cup of fine grated zucchini – squeeze out all excess water

1 beaten egg

2-4 tsp of grape seed oil

½ tsp pure star anise extract – optional but good.


Mix together all dry ingredients in a bowl, and then mix all the wet together in another bowl. Mix the wet ingredients into the dry ingredients. Keep mixing until the dry ingredients are well absorbed.

Preheat oven to 350 degrees. Spray baking dish with non-stick spray or line with parchment paper.

I like a small 6-inch baking dish.

Bake for 20 -25 minutes.

Let completely cool before cutting.

Makes 2 unrestricted servings. Each serving uses ½ cup of select vegetable and ½ tsp of grapeseed oil. Count sweetener if used.

Chai Latte Spice Recipe:

3 tsp of ground ginger

2 tsp of ground cinnamon

1.5 tsp of ground cardamom

1 tsp of ground allspice

1 tsp of ground cloves

½ tsp of ground star anise

1 tsp of ground garam masala

Mix well and store in an airtight container.

Excellent in baking, lattes, coffee, and teas.
