Thai Shrimp Cauli Rice Bowl


8 oz shrimp

1 tsp olive oil

1/2 cup snow peas

1/2 cups of sliced red peppers

1 tsp olive oil

1 garlic clove

1 tbsp IP Maple syrup

1/2 tsp fresh diced ginger

Juice from 1 lime

1 tsp of lime zest

1 tbsp fresh chopped cilantro

1 tsp chilies

1 tsp jalapeños

Salt and pepper

1 cup of cauliflower rice

Sauté 8 oz of shrimp till a nice pink. Remove from pan. Add 1 tsp of olive oil and stir fry until tender 1/2 cup of snow peas and 1/2 cup of sliced red peppers. Remove the veggies from pan and set aside with shrimp. In the pan combine the following ingredients in order: 1 tsp olive oil, 1 garlic clove through press (sauté on low until fragrant), 1 tbsp IP Maple syrup, 1/2 tsp fresh diced ginger, Juice from 1 lime, 1 tsp of lime zest, 1 tbsp fresh chopped cilantro, 1 tsp chilies, 1 tsp jalapeños, salt and pepper. Add your shrimp and veggies, heat through and place in a bowl over 1 cup of cauliflower rice Garnish with fresh lime slices and a sprig of cilantro.

8 oz protein, 1 tsp oil, 2 cups vegetables
