7 oz of extra lean ground beef, ground turkey or chicken
1 oz of egg white
1/4 cup of grated cauliflower
1/4 cup of grated radish
1 crushed garlic clove
1 to 2 tbsp of southwest seasoning
1/4 cup of sugar free broth to deglaze your pan
1 1/2 cups of cauliflower rice to serve your Southwest meatballs over
1 tsp of southwest seasoning for your cauliflower rice
2 tbsp of chili powder
2 tsp of cumin
2 tbsp of paprika
1 tbsp of coriander
1 tbsp of oregano
1 tsp of crushed red pepper
1 tsp of Cayenne pepper
1 tbsp of salt
Combine well and store in a glass container that seals.
Combine your choice of lean ground protein, egg whites, radishes, cauliflower, garlic clove, and 1 or 2 tbsp of Southwest Seasoning depending on your heat preference. Shape into 1 inch balls and place in a skillet over medium heat. Brown and turn until cooked through.
Add broth to pan to deglaze any tasty bits. Meatballs can be enjoyed over cauliflower rice seasoned with 1 tsp of southwest seasoning.
