Sirloin Tip Roast
Garlic cloves peeled
Pat dry roast, rub with olive oil and preferred seasonings. Pictured is: salt, garlic, paprika, black pepper, oregano and thyme. Rub direct into roast, cut a few 1/2 inch slots on top of meat and insert whole peeled garlic clove in slots. Roast at 425 degrees for 20 min then turn down heat to 325. Roast approximately 25 min per pound. Minimal internal temp should be 145 degrees. Once roast is done, remove from oven and let rest covered for at least 20 min before carving. The meat will continue to cook a bit so if you like medium rare, remove from the oven around the 135-140 degree temp if cook time was 25 min per pound.
