8oz shrimp (shell on is fine)
2 tsp of olive or grape seed oil
2 tsp of minced garlic
Pinch of cayenne
1/2 tsp of red pepper flakes
1 tbsp of fine chopped parsley
2 tsp of lemon juice
Fresh ground pepper
1/2 cup of sugar-free, carb free chicken broth
3/4 of baby spinach
1/4 cup of roasted grape tomatoes
1 cup of zucchini zoodles
In a pan over medium to high heat, sauté oil, garlic, red pepper flakes, and cayenne until the garlic starts to brown. Add the shrimp, tomatoes, spinach, and broth. Cook and turn until shrimp is heated through.
Remove pan from heat and sprinkle the shrimp with parsley, lemon juice, and fresh black pepper. Toss well to combine. Enjoy your shrimp over zucchini, or your favorite zero calorie noodle.
