Shepherd's Pie

8 ounces ground beef, turkey, or chicken

1 minced garlic clove

Ground Salt

Ground Pepper

1/2 tsp thyme + 1/8 tsp

1/2 tsp oregano + 1/8 tsp

1/4 cup celery

1/4 cup green onion

1/4 cup of sugar free, carb free beef broth

1.5 cups turnip, rutabaga, celery root or cauliflower

1 pkg IP potato puree (optional)

Base: Brown 8 ounces of lean ground beef, turkey or chicken. Add one minced garlic clove, fresh ground salt, fresh ground pepper, a half a teaspoon of thyme and half a teaspoon of oregano. Add 1/4 cup of chopped celery, 1/4 cup of chopped green onion and 1/4 cup of sugar free carb free beef broth. Mix well. Place in bottom of a 6 x 6 or 8 x 8 baking dish. Topping: Dice, cook and whip your choice of 1.5 cups of either turnip, rutabaga celery root or Cauliflower. Add 1/8 teaspoon of oregano and 1/8 teaspoon of thyme . For an optional twist, whip in one package of IP potato purée to the vegetable. Spread mashed vegetable over base evenly and place in the oven at 400° for 30 minutes.
