Roast Turkey


1 fresh turkey (you will need approximately 1 lb of turkey per per person)


Poultry seasoning (optional)

Rinse and wipe carcass, place bird breast side up in an appropriate sized roasting pan. (If stuffing, stuff cavity and sew or pin shut) You may tie the legs to the body with kitchen string.

Roast at 450 uncovered for 20-30 min, then salt and season the bird if you desire (optional) Turn heat down to 325 cover and roast for roughly 30 min per pound. Remove cover to brown bird in the last 20-30 min of roasting. Remove bird from oven and let rest for 20 min before carving. The larger the turkey the less time it takes per pound to roast Here are approximates for roasting times:

6 lbs (3 kg) - 3 hours

12 lbs (5.5 kg) 3 3/4 hours

16 lbs ( 7 kg) 4 hours

22 lbs (10 kg) 4 1/2 hours

Whole turkeys are safe when cooked to a minimum internal temp of 165 for stuffed, 180 degrees in thigh, and 170 in the breast. Check the internal temp in the innermost part of the thigh and wing, and the thickest part of the breast.
