1 cup of diced rhubarb
1 cup of diced green onions
¼ cup of apple cider vinegar
½ tsp salt
¼ tsp of cinnamon
¼ tsp of ground allspice
¼ tsp of ground cloves
¼ tsp of pepper
In a saucepan combine all ingredients. Cook over medium heat for at least 30 minutes or more, until rhubarb and onions have cooked down. Stir occasionally while cooking.
Cool and store in refrigerator.
Relish is a wonderful compliment to any type of white fish, roast beef, a topping for beef or turkey burgers.
An excellent tangy sauce for folks who like sauces on their protein.
Recipe yields 2 cups of select veggies.
Suggestion would be to use in ¼ cup increments.
