Rhubarb Ginger Baked Chicken


8 oz boneless skinless chicken breast

1 ½ cups sliced rhubarb on the diagonal

¼ cup diced green onions

1/4 cup fresh cilantro

1 garlic clove minced

1 tbsp fresh minced ginger

2 tsp olive oil – optional

½ tsp salt

½ tsp pepper

½ tsp ground ginger

¼ tsp of cinnamon

¼ cup of Walden Farms maple Syrup


Preheat oven to 350 degrees

Combine rhubarb, green onion, fresh ginger, garlic, oil, salt, pepper, ground ginger cinnamon in a medium bowl. Add chicken and mix together well.

Transfer to a baking dish, pour over the Walden Farms maple syrup.

Bake the chicken, basting the chicken at least once, bake for 40 – 45 minutes.

Remove from oven and garnish with fresh cilantro.

Tip: You can mix the chicken, rhubarb and seasonings and marinate overnight if time permits. Let sit at room temperature for at least 1 hour prior to baking.

Recipe yields 8oz of protein, 2 cups of vegetables, and 1 serving of sweetener.
