Pumpkin Spice Creme Brûlée

You will need: A kettle to boil water A baking pan 2-3 inches deep Small baking dishes or ramekins Ingredients: 1 ready made vanilla drink mix 1/4 cup of WF Maple Syrup 2 eggs 1 tsp pumpkin spice 1/2 tsp of maple extract optional 1/4 tsp of salt Method: In a medium saucepan pour in ready made vanilla drink and sprinkle in salt. Turn heat to low medium. Whisk in eggs 1 at a time. Then whisk in maple syrup. Whisk until small simmering bubbles form on the edges of the saucepan. Remove from heat and whisk in maple extract and pumpkin spice. Pour evenly into ramekins - at least 1 inch deep. Place ramekins in baking pan. Boil kettle full of water, and pour into baking pan around the ramekins (not in the ramekins). Bake at 325 for 35 minutes. Remove from oven and carefully using heat protective gloves remove ramekins from water. Cool, cover and place in fridge overnight. You may enjoy creamy or you can create a burnt top by sprinkling sugar-free granular sweetener on top and placing under a broiler on high. Watch carefully. Alternatively if you have a kitchen torch you can crisp the top with the same method.
