1-2 cups Zucchini noodles 2 tsp oil 1 tsp coriander seeds 2 whole cloves 1 star anise pod 1/2 tsp fresh peppercorns 1 tbsp ginger root minced 1 tsp garlic minced 2 green onions minced
4 cups chicken bone broth 8 oz of chicken from bone broth or leftover sliced chicken breast .
Toast spices in pan until fragrant for 2-3 minutes. In soup pot, heat oil, add ginger and garlic cooking for 1 minute. Stir in chicken broth, green onions, add a grind of salt and pepper and add toasted spices. Simmer for 30 minutes, strain and return to pot to simmer.
Prepare bowl with zucchini noodles, place chicken over noodles and ladle over broth. Garnish with limes, cilantro, Thai basil, sliced green onions, and/or hot sauce.
