Ingredients: 2 - 3 egg whites 1/2 tsp coffee extract - optional 1 tsp instant coffee- optional 1/2 tsp cream of tartar 2 tsp of granular sugar free sweetener 1 packet of cappuccino drink mix Method: Line baking sheet with parchment paper. Preheat oven to 225 degrees. In a deep clean cool bowl, add egg whites, extract and cream of tartar. Beat on high until stiff white peaks form. Mix together granular sweetener, cappuccino drink powder, and instant coffee. Slowly add the dry ingredients in small increments as you beat them into the egg whites. Drop by teaspoon into parchment paper, or pipe onto parchment paper with pastry bag and tip. Bake for 30 minutes - without opening the oven turn off oven and let meringues set in oven until cool.
