Broccoli & Chayote Maple Mustard Salad

Ingredients:

1 ¼ cup of broccoli florets cut into bite sized pieces

½ cup of chayote grated

¼ cup of diced red onion

1 tbsp Nutritional Yeast – Optional

1 packet of ideal Protein Trail Mix – Optional

Dressing:

1 tbsp of apple cider or plain vinegar

1 tbsp of lemon juice

2 tsp of olive oil

2 tsp of Dijon Mustard

1 tbsp of WF Maple Syrup

1 garlic clove through a press or fine diced

½ tsp of salt

½ tsp of pepper

Blend or puree all dressing ingredients and store in a sealed container or glass jar in the fridge until ready to use.

Method:

In a medium bowl place cauliflower florets, grated chayote, red onion and Trail Mix and toss the vegetables well. Drizzle over the dressing and toss well again to coat. Sprinkle Nutritional Yeast over top of the salad just prior to serving.

Tip: Maintenance can add more olive oil to the dressing.
