Braised Red Cabbage


Ingredients:

2 tsp of olive oil

½ cup diced green onion

1 cup of chayote, peeled and sliced like an apple

2.5 cups of red cabbage shredded, or sliced

¼ cup apple cider vinegar

¼ cup of water

½ tsp salt

½ tsp fresh pepper


Method:

Fine dice the green onion and add to a large skillet with the olive oil. Sauté over medium heat until the onion is soft.

Add the cabbage, chayote, vinegar, water, and salt to the pot. Stir together and cover pot with a lid and let the cabbage cook, stirring occasionally until tender, about 30 minutes.

If the bottom of the pan starts to dry, add a little more water.

Add the fresh pepper and stir well, adding more salt and a splash of vinegar if desired.
