Baked Chicken & Mint Chimichurri


Double batch of mint chimichurri recipe divide in half

4 boneless skinless chicken breasts – approximate 8 ounce weight per breast




Marinate the chicken breasts in half of your prepared mint chimichurri for 1 hour to 24 hours. Preheat oven to 400 degrees. Discard marinade from chicken. Place chicken on cutting board and slice a side pocket into each piece of chicken and place a healthy teaspoon of chimichurri in each piece closing with a wooden toothpick or two. You should have a small amount of chimichurri left when done.

Place chicken in a baking dish, and bake for 30 minutes uncovered. After 30 minutes, brush remaining chimichurri on top of breasts and bake for an additional 15-20 minutes.

Serve while warm out of the oven, whole or sliced on the diagonal. Be sure to remove wooden toothpicks.

Pair chicken with roasted vegetables, over a bed of riced cauliflower, or as a protein source over a meal salad.
